When life gives you (an economic) depression, look to your ancestors for inspiration. Thanks to my pal Mimi, I have a lot of Vegenaise (vegan mayonnaise), so I veganized this Southern classic recipe for chocolate cake made with mayonnaise in place of butter and eggs. They came out absolutely beautifully. A tender, delicate crumb, no big air pockets, and they rose higher than most other vegan cake recipes I’ve tried.

Their 30 reasons to become a vegetarian video is not overdone.
In Bittman’s latest book he reports that Americans raise and slaughter 10 billion animals each year for consumption, and that we should all decrease consumption of animal products…

So I just learned how they get those canned mandarin orange segments I loved so much in childhood so perfect and pith-free. They use a lye-based solvent to dissolve the undesirable bits.

I was excited to hear that So Delicious (parent company Turtle Mountain) was introducing soy yogurt, because their soy ice cream is fantastic. I bought my first 6-oz container last night. Review follows:

This super-rich yet low-fat brownie recipe is one I’ve been working on since I read about the idea in 101cookbooks.com. (the original recipe uses 4 eggs) It uses black beans kind of like you’d use tofu. I’ve modified the recipe liberally to make it vegan.
Here is the black bean brownie recipe so far. It’s really good. This photo, from an earlier batch before I perfected it, does not do the brownie texture justice:
