Why don't your vegan mixes require the use of egg replacer?
You don't need to add egg replacer because we have created our own custom egg replacer and incorporated it into the mix -- so the egg replacer is built in.

We are proud of our organic, unprocessed and unrefined ingredients. The ingredients page is here.

I am on a diet.
Well, meet your new best friends. All Goodbaker mixes are low fat and only 2 Weight Watchers Points per serving. That's as low as you'll find anywhere. And Goodbaker mixes taste better and are more nutritionally sound than other processed non-fat or fat-free dessert options.

I am lactose intolerant.
Then you're in luck. All Goodbaker mixes contain no dairy products at all. No eggs or cholesterol either.

Is there hydrogenated oil in your mix? Trans-fats? Cholesterol?
No, no and no. We actually don’t add any oil at all. And we never use hydrogenated or cholesterol-containing ingredients.

Please provide allergy information.
Goodbaker mixes contain no dairy products, or egg products, or nuts. Most do contain soy flour, which although nutritious, is an allergen for some people. And of course they contain wheat and gluten.

Our mixes are produced on shared equipment that also handles egg, dairy and tree nut ingredients.

I am allergic to peanuts.
Goodbaker mixes do not contain nuts or nut products. Our mixes are produced on shared equipment that is occasionally used with tree nuts, but not peanuts. Sometimes there is cross-contamination between peanuts and tree nuts from the ingredient suppliers over which we have no control. 

I am allergic to Eggs
I am Allergic to Dairy
All of our mixes were designed for people who choose not to eat eggs or dairy. So none of the mixes require eggs, and none of the mix recipes contain eggs or dairy. However, our mixes were not designed for people who have serious food allergies. We use shared equipment that may have been exposed to egg powder or milk powder when producing a different product. The equipment is cleaned, but for serious allergies that may not be enough and we can't make any guarantees on something so serious. 

I am a Celiac (allergic to wheat and gluten).
All Goodbaker mixes do contain some wheat and gluten. They are not suitable for a wheat-free diet.

Do you have any wheat-free mixes?
All our mixes use whole wheat flour.

Are your mixes kosher?
Yes! All our mixes are certified kosher pareve (parve) by an orthodox Rabbi. We maintain the highest standards for ingredients and production. All of our ingredients are kosher, all our mixes are kosher, our facility is regularly inspected and kosher approved. Pareve means that our mixes can be consumed with either a meat or a dairy meal under Jewish dietary rules, because they contain no meat or dairy ingredients.

I over-baked the cookies, what do I do?
If you baked to cookies too long so that they are dry and brittle, it may be possible to revive them by storing them overnight in an airtight container with a few slices of fresh bread, a few slices of apple, or even a wet wadded-up paper towel. The dry cookies will absorb moisture and soften up. Remove the “donor” items in the morning to prevent spoilage.

What is different about aluminum baking powder and why do you not use it?
All baking powders work through the reaction of baking soda and a
heat-sensitive acid, which activates the baking soda, creating the nifty bubbles that make your baked goods rise. The difference in baking sodas is in the acid used. Most commercial mixes use sodium aluminum sulfate, which is cheaper to produce but contains aluminum. Our baking powder uses more natural acids (calcium acid phosphate or sodium acid phosphate), which do not contain aluminum or metals.

The reason people might want to avoid eating aluminum is the link that exists between aluminum in the body and Alzheimer's. Aluminum compounds have been found to be an important component of the neurological damage characteristics of Alzheimer's Disease, although the mechanism is not yet understood. So until more is known, we want to make sure that you are not exposed to a potentially damaging ingredient.

Do you ship to Canada?
We've had to discontinue shipping to Canada due to the high cost of cross-border shipping.

Are the Goodbaker mixes organic?
All the flours and sweeteners we use are organic. Some of the other ingredients, like the baking powder and vanilla, are pure and all-natural, but not certified organic. We use nothing artificial.

Are all the Goodbaker mixes Vegan? Vegetarian?
Yes, and yes!

I'm not a Vegetarian. So why should I try these mixes?
The fact that Goodbaker mixes are Vegan and made from minimally-processed organic ingredients ensures you of a healthy product -- much healthier than grocery-store options. They are lower in fat, higher in fiber, often higher in protein (plant-based protein), and cholesterol-free. They also contain all of the trace nutrients that conventional processed products lack. And it's a good thing, too, because after one taste, you'll want to eat a lot of them.

Because of a heart condition I don't use any added fat. Can your mixes be made without adding any oil?
Yes! our mixes can be made without oil, though the texture will be different in some cases compared to the normal preparation (this is true of all fat-free baking). Detailed fat-free instructions are listed on this web site along with the description of each mix in the individual product pages. Basically, you replace the oil with applesauce or apple butter. You can also use the fruit-based fat replacement products that are available in most grocery store baking sections.

How do your mixes compare to the mixes I can buy in the grocery store?
Here's an example: One prepared Goodbaker chocolate chip cookie has half the fat, twice the protein, three times the fiber, and less sugar and fewer calories compared to one prepared Betty Crocker chocolate chip cookie. And Goodbaker mixes do not contain the refined flour, partially hydrogenated oils or artificial flavors that most grocery store mixes do. Oh, and the Goodbaker cookie tastes better too. Try one and we're sure you'll agree.

Do you use bleached flour or white sugar?
Nope, never.

What's the story with soy?
Soy is an excellent source of plant-based protein and antioxidants. In addition, published medical studies have shown a positive connection between soy consumption and a reduced risk of heart disease for women and men, and a beneficial reduction in menopause-related problems for women. Combining soy flour with wheat flour increases the nutritional content and produces a better amino acid profile. Most Goodbaker mixes contain some organic non-GMO whole soy flour.

What is GMO?
GMO means "genetically modified organism". Goodbaker never uses GMO products.

How "healthy" are the mixes?
While we would never describe a cookie or brownie as a health food, all Goodbaker mixes are as healthful, as low in fat and high in fiber as we can possibly make them, while keeping them delicious. And of course they are all free of cholesterol and lactose. We are sure you'll feel nothing but good after indulging in our treats.

How long will the mixes keep?
Goodbaker mixes like to be stored in a cool dry location, and will remain fresh for about 9 months after purchase. All our products are expiration dated on a tamper-evident green band. Because they contain whole-grain ingredients, they naturally have all the healthy oils of the grain germ, so they will eventually go bad if kept beyond the expiration date. You can freeze the mixes for longer storage, but it's a much better idea to enjoy them quickly (and then get more)!

Should I grease my cookie sheets?
We recommend insulated non-stick sheets, parchment paper or silicone baking sheet liners. If you use plain baking sheets, we do recommend lightly greasing them.

What oil should I use in the mix?
You can use any cooking oil (sometimes called "salad oil") that has a mild flavor and handles high heat. We like to use safflower oil, which is fairly healthy and stands up to the heat of cooking. Canola oil is also fine. Avoid green olive oil (too strong flavor) and flax oil -- it can’t handle high heat.
Try to buy oil that is organic and expeller-pressed, rather than conventional oil that is heat- or solvent-extracted, or highly refined.
If you do eat dairy products and are not concerned about cholesterol, you can also use an equivalent amount of melted unsalted butter.

What if I don't have good measuring spoons?
It is important to be as accurate as possible when measuring the oil and liquids. Vegan recipes are less forgiving than conventional, so a small change in the liquid ingredients can have a big effect on your results.

Are there any trans fats in your mix?
No, Goodbaker baking mixes are trans fat free. There are no trans fats in our mix, and no hydrogenated oils. In fact, we add no fat or oil at all.

Your chocolate chips taste so good! Where can I buy them?
Thank you. Yes, we are now offering them for sale here: organic chocolate chips. They are not available in stores. Our organic, dairy free chocolate chips come from Perugia, which is the chocolate capital of Italy. They're the best we've ever tried, and we've tried them all! Note that they will not be sold during the warm summer months because they may melt during shipment. They will be available each winter.

Do Goodbaker mixes require any high altitude adjustments?
Our mixes were developed at sea level, but they are fairly tolerant of altitude changes.

However, it's good to keep these high altitude points in mind:
- Grease very well or line your baking pans or trays.
- Increase baking temperatures by 25 degrees F (15 C) for the first half of the baking time, to help the batter strengthen quickly before it overexpands. Then reduce the temperature back to normal for the 2nd half of the baking time.
- Check for doneness early and reduce baking time if necessary, because baked goods tend to dry out faster in high elevations.
- with our Chocolate Layer Cake Mix only, add one extra Tablespoon of water.

Can I freeze the muffins/cookies/cupcakes/brownies?
Yes, Freezing should be no problem. Wrap in 2 layers to prevent moisture loss. (example: plastic wrap then aluminum foil, or plastic wrap and then in plasticware.) It's best to eat the fresh muffins within 2 days, and the dessert items within 4 days, so you can freeze any items that would sit longer than that.
Hint: do not thaw in a microwave, because microwaves make baked items gummy. Place on a dish in a sunny window or warm area and they will thaw quickly.

How about making a white cake mix (vanilla cake mix)?
We only use whole wheat flours and natural flavors, and have found that we can make a great chocolate cake and chocolate frosting with our gourmet natural cocoa. But a whole-wheat yellow cake made with natural vanilla flavor is very different from the white cakes made with refined flour and artificial vanillin flavoring that most people have become accustomed to eating. This is why we do not currently offer a white or vanilla cake.
