Q: What oils should I use to make Goodbaker mixes?
A: Our mixes work well with just about any cooking oit. When we bake it, we use half canola (monounsaturated) and half safflower or grapeseed oils (polyunsaturated). That way you get both polyunsaturated and monounsaturated oils in balance.
For the scones, and often the muffins, we use all olive oil, because we think it adds a certain rich mouthfeel. Or you can use the balanced oil blend above.
Note that you should never heat or cook with the healthy delicate oils like flaxseed oil. Use them for salad dressings and dipping instead.
