Q: I'm trying to bake a vegan cake recipe that uses tofu and applesauce, and the center stays wet and never sets. What can I do?
A: It sounds like your recipe has too many wet ingredients, but regardless, one easy fix for a wet cake recipe is to bake it in a Bundt-style pan instead of a round or square cake pan. The hole in the center of the Bundt pan allows heat to reach more of the batter and prevents the wet, sticky center. Alternatively, you could make it as cupcakes instead -- which also increases the surface area and allows the batter to cook faster and more thoroughly.
