Vegan Cornmeal Pancakes
Using Goodbaker Hearty Corn Muffin Mix
Easy, quick, and delicious vegan corn pancakes.
vegan cornmeal pancake recipe:
Starting with a bag of Goodbaker corn muffin mix, prepare according to the label directions, but add an extra 1/2 cup of milk or water (that's 2 cups total). Pour out pancakes onto a medium-hot non-stick griddle. Use non-stick cooking spray. Try adding fruit — wild blueberries are especially good.
To make a half recipe, use half the bag, 1 cup of milk or water, and 1-1/2 to 2 Tablespoons of oil.
